Cajun Boudin This is a Louisiana specialty sausage that is made with lean pork and rice.  The pork is cooked and then ground and mixed with the seasoned rice for a great Cajun flavor.  Boudin is fully cooked and can be prepared on a grill, steamed, baked, or fried.  Boudin can be eaten as an appetizer, entree, or as a side dish.
